This was one of the most popular dishes at the Momma Cherri’s Soul Food Shack. Gordon Ramsay loved this dish, and though he tried to improve the recipe when he was with me, he realised that he couldn’t. It’s as American as apple pie, and the ultimate comfort dish.
This recipe is for 6-8
900g minced beef, 2 onions – peeled, 2 cloves garlic- peeled, 1 green pepper, 1 red pepper, 1 celery stalk, 6 pieces of stale cornbread or 4 slices of stale white bread, 3 eggs, 2 tablespoons Worcestershire sauce, 2 tablespoons American mustard, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon Cajun seasoning, 1 teaspoon chopped Coriander, 2 teaspoons dried mixed herbs, 12 rashers streaky bacon / 6-8 rashers back bacon.
