Searing is one of the most critical techniques a home cook can learn. And specially, knowing how to properly Sear a Steak is probably the most important part of cooking a perfect steak at home.
When you sear a steak, you the meat a nicely browned, crisp exterior that tastes incredible, and provides a great contrast in texture with the more tender center. Searing also helps to ensure you get the nice crispy outside, without overcooking the center.
In this video, I a porterhouse, to show the technique, but you should apply the same to Filet Mignon, New Yorks, Ribeye’s or just about any cut of steak.
