[Butternut Squash Black Bean Enchiladas with Green Sauce]

For the Enchiladas:
– 7 corn tortillas
– 3 cups cubed butternut squash
– 1/2 bell pepper
– 1/2 medium onion
– 1 15 oz can black beans (http://go.thrv.me/SH5Su)
– 1/2 Tbsp coconut oil (http://go.thrv.me/SH5T4)
– 1/2 Tbsp taco seasoning (http://go.thrv.me/SH5T2)

For the Enchilada Sauce:
– 1/2 Tbsp coconut oil (http://go.thrv.me/SH5T4)
– 1/2 cup minced onion
– 2 garlic clove, minced

– 1.5 cups vegetable stock/ broth (http://go.thrv.me/SH5T8)
– 2 cans (8 oz or approx. 1 cup) diced green chilies (http://go.thrv.me/SH5TI)
– 1 diced banana pepper (or jalapeno)*

*rinse canned green chilies before adding to recipe to take away some of the saltiness and then add salt to the sauce to taste

– 1/2 medium onion
– 1 stick celery, diced
– 1 medium carrot, diced
– 1/2 head of cauliflower

– 1 cup water

Serve over spaghetti squash or noodles. I served mine with sautéed mushrooms, onions and fresh tomato.
