Slimming World Syn Free root vegetable & lentil casserole slow cooker recipe

1 onion
1 tsp cumin, paprika, coriander and crushed mustard seeds
220g parsnips
2 celery sticks
1 large leek
220g carrots
220g swede
220g potatoes
100g red lentils
850ml vegetable stock

Heat a large pan sprayed with low calorie cooking spray. Add the onions and fry for a few minutes. Add the spices and toast until lightly browned.
Chop all the vegetables into similar sized pieces and add to the slow cooker crock pot. Add the fried onions, lentils and stock. Stir well and cook on ‘medium’ for 5-6 hours.
