Chinese Stir Fried Potato & Carrot Recipe (Chinese Vegetarian Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Another one of my favourite vegetarian dish with it’s sweet and savoury taste. serve with a rice dish or just on its own.

4 potatoes
2 carrots
3 cloves garlic
1cm ginger root
Half teaspoon ground red pepper
1 spring onion
1 tablespoon sugar
2 tablespoons of soy sauce

Chop garlic, ginger and the spring onions
Place these on a dish next to the ground red pepper

Slice carrots into thin slices
Place these on a dish for later
Slice potatoes into thinly
Place these on a dish next to the carrot

Once all of these are completed, you’re ready to start cooking

Heat 1 litre of oil in a wok until smoking hot
Place potato and carrots into the oil
Deep fry for 3 minutes until the potato is soft
Remove from oil and drain

Heat 1 tablespoon oil in the wok
Add the ginger, garlic, spring onions and ground red pepper
Fry for few seconds
Add the potato and carrot
Add soy sauce…sugar… and salt to your taste
Stir-fry for a minute
Transfer to a dish and serve
