Bored of your usual breakfast dishes, but cannot think of an alternate. Then ‘Mexican Quesadilla’ is the perfect dish for you.

Mix of vegetables and spices, stuffed in Tortilla, can be the best tummy filling breakfast dish. Well, this appetizer can also be your evening snack or suffice for dinner as well.

Ingredients:

1 Chopped Bellpepper
1 Chopped Onion
3 Chopped Babycorn
1 Chopped Broccoli
3 Chopped Mushroom
1 Tbp Tomato sauce
1 tsp Mexican seasoning
1 tsp Chilly flake
1 tbp Oil
1 Chopped Garlic
Boiled rice
Yellow Cheese
2 Mexican soft tortilla bread

Method:

Take a pan add 2 tbsp of oil, add 1 tsp of chopped garlic, add 1 medium chopped onion, add 2 tbsp of broccoli, add 2 tbsp of mushroom , sauté the mixture well.

Now add 2 tbsp of corn, add 2 tbsp of finely chopped tomato, add 3-4 tsp of chilli sauce, add pinch of chilli flake, add ½ tsp of salt, add 1 tsp of fajita seasoning, 1 tbsp of jalapeno, 1 tsp of chopped coriander, add 10-12 drops of Tabasco sauce , stir it well. Let the veggies cook for a while.

Now add 2 tbsp of yellow cheese into the mixture.

Now take one tortilla bread, stuff the mixture into the bread and cut the bread into triangle shape.

Serve best with tomato salsa and sour cream!
