Gluten Free Christmas Cookies-Episode 8

2 Eggs
1/4 Cup Almond Butter
1/4 Cup Grass Fed Butter, softened
1/2 Cup Coconut Sugar
1 Tbsp Honey
1/4 Cup Grass Fed Butter, softened
1 tsp Ginger powder
1 tsp Cinnamon, ground
Pinch of Salt
1/2 tsp Baking powder
1 1/2 cups Coconut Flour


1. In a large bowl whisk the eggs before adding in both butters and continuing to whisk until smooth… dont worry not much of a workout
2. Next add in the coconut sugar, honey, ginger, cinnamon, salt and baking powder and continue to whisk until combined.
3. Using a wooden spoon fold in the coconut flour, transfer mix to a bench lined with baking paper. Spread evenly before rolling up into a cylinder and placing in the freezer to firm for 30 minutes to an hour
4. Preheat oven to 180 degrees C. and line a baking tray with baking paper.
5. Remove cookie dough from freezer and from rolled baking paper then cut 1/2cm thick and spread evenly on baking paper. Bake for 10-12 minutes or until slightly browned on edges, allow to cool for 5 minutes or jump in straight away to its chewy goodness… Merry Christmas
