Christmas brings in a lot of gifts especially in the form of cakes & wine bottles. You can make good use of those extra wine by adding them to make a good Christmas bake- Wine Cake. Filled with all rich dry fruits, the cake sets in the festive mood & spirit 😉
Serves- 8 equal portions.
1 cup red wine
½ cup seedless dates
¼ cup almonds, chopped
¼ cup cashews,chopped
1 tbsp tutti frutti
¼ cup raisins (kishmish)
4 to 5 halved walnuts, chopped
For the cake-
2 cups refined flour (maida)
1/3 tsp salt
½ tsp baking soda
1 tsp baking powder
¼ tsp cinnamon powder
¼ tsp nutmeg powder (jaiphal)
1 tbsp water
2 tablespoon curd
½ cup brown sugar
¾ cup refined oil
½ cup milk
1 tsp coffee powder
1 tsp vanilla essence
1 tbsp orange zest
In a bowl soak the chopped dry fruits as well the tutti frutti, raisins in red wine.
Cover and keep this bowl in a cool place overnight.
Sieve the refined flour (maida) with salt, baking soda and baking powder.
Add cinnamon powder, nutmeg powder and coffee powder. Mix well.
Stir 1 tbsp water in 2 tbsp curd till smooth.
In another bowl, add curd & water mixture, brown sugar, refined oil and whisk well.
Add milk, coffee powder and vanilla essence and whisk well.
Fold the dry ingredients (refined flour mix) into the wet ingredients.
Add the soaked dry fruits mixture and orange zest in the cake batter.
Pour the batter in a butter paper lined cake tin.
Bake in a preheated oven for 200 °C for about 45-50 mins to 1 hour or till a toothpick inserted in the cake comes out clean.
Dust some powdered sugar on top. Decorate & serve.
