Russian Easter Cake – Kulich – Кулич – A Family Favourite – Russian Around The Kitchen

Here is a recipe of a traditional Russian Easter cake – Kulich!
My mum used to make this for us every year. One of the foods that reminds me of being with my family and brings back so many memories of my childhood in Siberia.

Strong white bread flour – 500g
Fast acting dried yeast – 11g
Whole milk – 200ml
Caster sugar – 180g
Medium eggs – 3 +2 yolks
Sour cream – 100g
Melted butter – 150g
Vanilla extract – 1tsp
Salt – 1tsp
Zest from 2 lemon
Crashed cardamom pods – 3
Dried cranberries – 50g
Dried chopped apricots – 50g
Mixed dried fruit – 150g
For the glaze :
Egg whites – 2
Icing sugar – 100g
Lemon juice – 2tsp
Sprinkles of your choice
