Traditional Cypriot Recipe Flaounes – Vegan Easter Dessert

Traditional Cypriot Flaounes are amazing! So I created the vegan version of them, and they are delicious! Flaounes are what Cypriots bake for Easter, and it’s part of their traditional cuisine and culture. You could call them an Easter bread!

11/3 cups chick pea brine
200 g white cheese
300g yellow cheese
2/3 cups semolina
16 tbsp whipped brine
1 tsp baking powder
2 tsp mehlep
2 tsp mastica
2tsp cinnamon

21/4 cup flour
1/2 cup + 1 tsp sunflower oul
1/2 cup milk
1tspbaking powder

How to make the filling:
From a jar or can of chick peas remove the water. Keep the water and set aside. We will not be using the chick peas for this recipe, only the brine. Pour the brine into a bowl and with an electric mixer mix for 5 minutes until white in color and frothy. Set bowl aside. To another bowl add in all of the rest of the filling ingredients. Mix and add the chick pea brine mixture and mix with your hands. Cover and put in fridge. Now lets make the dough.

How to make the dough:
Place the flour and oil in a bowl and with your hands mix until the mixture resembles crumbs. Add the baking powder and milk and knead until a soigh ball forms. Cover with plastic wrap until ready to use. When youre ready with a rolling pin roll out small pieces of dough at a time in a circular shape. Then places the dough on a bed of sesame seeds.add the filling in the center and close up the dough. Brush with olive oil.

Bake at 200 degrees celsius for the first 15 min and turn down the heat to 150 for another 25-30 min. Your flaounes should be golden brown
