Recipe:

CHOCOLATE SPONGE
» 6 eggs, separated
» 3/4 cup (180 g) sugar
» 3/4 cup (100 g) cake flour
» 1/2 cup (50 g) cornflour
» 1/2 cup (50 g) cocoa, unsweetened
» 1 pinch of salt

LIQUID FOR SOAKING:
Alcoholic:
» 1/5 cup (50 ml) water
» 1/4 cup (60 ml) cherry liqueur
» 1/4 cup (50 g) sugar
Non-alcoholic:
» 1/2 cup cherry juice

FILLING AND DECORATION:
» 450 g cherries (canned)
» 1 cup (250 ml) cherry juice
» 2 tsp cornflour
» 3/4 cup (100 g) sugar
» 1 cinnamon stick
» 3 cups (750 g) whipping cream
» 1.75 cups (200 g) grated chocolate

TIPS FOR PREPARATION:
» Let the sponge cool down completely after baking and then cut twice
» for decoration purposes you will need additional 13 cherries
» cool the cake before serving

BAKING INFO:
»Springform pan Ø 9 inch (24 cm) or 10 inch (26 cm)
» preheat oven | 392°F / 200 °C
» bake for 30 minutes
» make chopstick test
