eggless tutti frutti cake :
followed Nita mehta’s recipe.
maida 175 gm
powdered sugar 125 gm
butter at room temperature 100gm
baking powder 1/2 tsp
baking soda 1/2 tsp
vinegar 1 1/2 tb sp
milk 1/2 cup plus 1/4th cup
vanilla essence 2tsp
tutti frutti 1/2 cup
1.preheat oven to 190degree Celsius
2.sift flour into a bowl, add butter and mix using fingers gently ..do not overmix.
3.add powdered sugar and baking powder to this , mix again
4.divide 1/2 cup milk into two equal parts.to one part add vinegar and stir. slightly warm other part and add in soda to it and mix. now to this add vinegar milk. it will start foaming ,immediately transfer to flour and start mixing. add in vanilla essence and beat using hand mixer until batter becomes fluffy and smooth.
5.add tutti frutti and fold the batter once gently, transfer to a greased and dusted loaf tin. tap once and cover the tin with foil in order to avoid hard top crust.
6.bake at 190 degree Celsius for about 20 minutes and bake again at 150degree Celsius for 30 minutes or until its done. once done insert a tooth pick in the centre og cake and check if it baked well. rest the cake in tin for ten minutes before taking out.
6.once its cooled completely, cut into pieces and enjoy with a cup of tea.
