This stunning and elegant cake combines two of my favourite flavours passion fruit and mango. It consists of several layers and is covered in double mirror glaze to give it a special wow effect. This passion fruit and mango mousse is so spectacular and is of the best desserts I have ever made.

Ingredients :
Almond sponge cake layer (18 cm ring)
2 eggs
125 gr of unsalted butter
125 gr caster sugar
125 gr plain white flour
1/2 tbsp baking powder
1 tbsp vanilla extract
1 tsp of almond extract

Mango jelly layer (18 cm ring)
300 gr mango puree ( puree your mangoes)
50 gr of sugar
10 gr OR 1tbsp of gelatine + 4 tbsp of cold water

Passion Fruit Mousse (20 cm ring)
200 gr strained passion fruit
120 gr caster sugar
3 sheets leaf gelatine
4 tbsp water
2 egg whites
1 tsp lemon juice
450 ml double cream, lightly whipped

Mango Mousse layer – (18 cm ring)

300 mango puree (about 1,5 medium sized mangoes)
Juice 2 limes
250ml double cream
100 icing sugar
3 leaves gelatine

Mirror Glaze :
150 gr glucose syrup
150 gr granulated sugar
75 gr Water
10-12 gr gelatin
75 gr Water for gelatin
100 gr condensed milk
150 gr white chocolate
Food colouring of your choice ( yellow and pink)
1 tsp of titanium dioxide ( optional)
