Maple & Bacon Cupcake Recipe | Cupcake Jemma

Basically, put bacon in as much of your cooking as possible!!! Like these delicious Maple & Bacon Cupcakes. Sweet and salty and peculiarly irresistible. Ingredients below…YAY!

For the cupcakes –
130g softened unsalted butter
100g caster sugar
25g soft dark brown sugar or muscovado
2 large free-range eggs
2-4 rashers of candied bacon chopped into teeny tiny pieces
125g Self Raising flour (sifted)
A pinch of salt
1.5 tbsp milk
1/4 tsp vanilla extract

For the Maple Buttercream –

200g softened unsalted butter
450g Icing Sugar (sifted)
2-4 tbsp Maple Syrup (the real deal, not the maple ‘flavoured’ stuff)
1-2 drops of Maple Extract if you can get it!
