Todays video is step 1 in my holiday bake sale preparations, in the video I am making a double batch which gave me a total of 6 dozen cupcakes. This is the only chocolate recipe I use for either cakes or cupcakes.
Here is the recipe (single batch):
Bowl number 1 (blend wet together)
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
Bowl number 2 (sift the dry together)
1 3/4 cups all-purpose flour, plus more for pans
2 cups sugar
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
In a separate cup have 1 cup freshly brewed hot coffee
Pour mixed wet into sifted dry ingredients and mix them till all is combined, scrape bowl and mix again.
Add the coffee to the batter and mix, once done pour into the jumbo bottle (squeeze bottle makes it easier and faster).
Place cupcake liners to your pan and fill half way with the batter.
Place in oven and bake for approximately 15 minutes in a 350 degree oven.
Stay away from the bottom level of your oven (too close to heat source) only use centre level and up.
Once cooled either decorate or place in airtight container to freeze for decorating on another day.
