Salted Caramel Chocolate Mudslide Cupcake Recipe | Cupcake Jemma

Remember that naughty Salted Caramel I showed you how to make last time? Well, I doubt it’s possible, but in case you are struggling to find a use for it I thought I’d show you my recipe for one of my favourite cupcakes of all time which has Salted Caramel inside and out – Salted Caramel Chocolate Mudslide Cupcakes!

Chocolate Cupcakes –
350g plain flour
60g cocoa powder
370g caster sugar
1 tsp bicarbonate of soda
pinch of salt
150ml chocolate chips
3 large eggs
240ml cooled coffee
240ml/g buttermilk
210ml vegetable oil
Half batch of Salted Caramel (as per previous vid)

Salted Caramel Frosting –
300g unsalted butter (soft)
540g icing sugar (sifted)
the other half of the Salted Caramel (150ml)
