Sweet Lemon Cupcake

Difficulty: Easy
Time: 1.5 hours
Number of servings: 12 cupcakes

Ingredients needed:
200g self-raising flour
200g unsalted butter
180g caster sugar
3 large egg whites
1 teaspoon baking powder
½ cup buttermilk
Finely grated zest and juice of 2 lemons

For the frosting:
120g unsalted butter
120g icing sugar
Juice of 1 lemon
½ teaspoon vanilla essence

Directions:

For the cake:
1. Preheat the oven to 180 deg cel. Line the muffin tin with 12 cupcakes cases.
2. Whisk together the milk and egg whites.
3. Beat sugar and lemon zest and juice for about 1 minute until the mixture is moist and fragrant.
4. Add the butter and beat for 3 minutes at medium speed until mixture is light. Beat in vanilla essence.
5. Fold in flour mixture and milk-egg mixture in alternate additions, starting and ending with the dry ingredient.
6. Continue beating for another 2 minutes, until the batter is homogeneous and fluffy.
7. Place the batter into the cupcake cases and bake for 20-22 minutes, until risen and springy to the touch.

For the frosting:
1. Beat sugar and lemon juice for 1 minute. Add in vanilla essence.
2. Fold in butter and beat for full 10 minutes at medium speed until the mixture is light and fluffy.
