The Best Carrot Cupcake Recipe

Preheat oven to 350F.
Time: 20 to 25 min
makes 16 Cupcakes

1 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
pinch salt
1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1 cup of crushed pineapple in juice (drained well)
1 cup grated carrots
1/2 cup loosely packed sweetened flaked coconut or substitute for 1/2 cup raisins.

1- In a small bowl, mix together flour,baking soda cinnamon and salt.
2- In a large bowl, whisk together sugar,oil and eggs until smooth, Add pineapplee , carrots , oil and eggs
until smooth.Add pineapple,carrots and coconut, beating until mixed.add mixture, beating just until blended.
3-scoop batter into prepared pans.bake for 20 to 25 min or until golden brown. Let it cool completely and decorate.
