Amla Curry Leaf Rice is very healthy food rich in iron and vitamin C. Good for diabetic peoples, women in pregnancy, and feeding times.. It is also good for hair growth.
Amla – 4 to 5
Curry leaves – 1 cup ( it should be tender)
Green chilly – 5
Red chilly – 2
Small onions – 6
Garlic cloves – 6
Jeera – 1 tsp
Rice – 1 cup ( 250 gm)
( cook and let it cool.. I used ponni pulungal rice)
Gingerly oil, mustard seeds, ulund dhal, gram dhal, asfotida, turmeric powder, salt.
Lemon juice – 1 tsp
Take out seeds from amla, and grind it in mixie, without adding water. Remove it and in same mixie put curry leaves, 3 green chilly, Jeera. Add very little water and grind it to a smooth paste.
In 5 tsp of oil, fry mustard seeds, dhals, asfoetida, add finely chopped onions, garlic, red chilly and green chilly, fry it for 2 minutes.
Add crushed amla and fry for 2 minutes, add grinded curry leaf paste, curry leaves and cook for 2 minutes.
Add little turmeric powder, salt and mix, cook in low flame for 2 minutes. Switch off and let it cool for 5 minutes.
Add cooked rice and mix gently. Adjust salt as per taste. Add lemon juice and mix well.
Tasty, healthy mixed rice is ready.
