MEDITERRANEAN QUINOA SALAD – low fat vegan, gluten free recipe

(forgot to add the oven temperature was 180C/350F)

-ingredients-
3 bell peppers
2 red onions
2 courgettes/zucchini
1-2 lemons
balsamic vinegar (the more the better in my opinion)
garlic
salt & pepper
1-1/2 (more or less) cups quinoa
2tsp veg stock powder
((PSA – adding olives to this dish makes it 1000x better! unfortunately I had none on hand, but please do try. also add a drizzle of olive oil if you want))
