How to make Ecuadorian Ceviche (an easy, healthy recipe!)

Ecuadorian shrimp ceviche recipe:
1.5lb shrimp, cleaned, peeled and blanched for 1 minute
1 red onion, finely sliced
3 tomatoes, chopped and seeds removed
1 bunch cilantro, finely chopped
8-10 limes, juiced
1 orange, juiced
Corn nuts

Combine all ingredients in a bowl and let it marinade in the fridge for an hour. Serve with a side of corn nuts!
