These were really good and surprisingly filling. Two rolls with 1/4 cup of sauce is 2 Points Plus values.
Eggplant Goat Cheese Rolls
1 eggplant (1#) cut lengthwise into 8 slices
1/2 (14 oz) can water packed artichokes, drained
2 oz low fat goat cheese, crumbled
4 Tbsp chopped fresh basil
1 (8oz) can garlic & onion tomato sauce
Spray broiler rack with non-stick spray and preheat broiler.
Place eggplant in one layer on broiler pan, lightly spray with nonstick spray. Broil inches from heat until lightly browned, 3-4 minutes. Transfer, broiled side down, to work surface and let cool slightly.
Meanwhile, to make filling, chop artichokes. Combine artichokes, goat cheese, 2 tablespoons basil and 1/4 teaspoon pepper.
Place one eighth of filling on the short end of each eggplant slice and roll up. Place seam side down in 1 qt microwaveable baking dish. Top rolls with tomato sauce and remaining 2 tablespoons basil. Cover with wax paper and microwave on high for 4 minutes. Remove wax paper and microwave until heated thru and sauce is bubbling, 2-3 minutes.
