Weight Watchers Recipes: Bacon and Vegetable Frittata

Hi Everyone,

Today for lunch I decided to make this frittata, I had a couple of different vegetables that I had to use. So I thought i’d make a video and show you how it’s done.

400g Sweet Potato, Peeled and Cut into 2cm Pieces
125g short cut bacon, chopped
1/2 cup capsicum, chopped
7 Medium Egg, lightly beaten
1/2 cup grated parmesan cheese
1/2 cup frozen peas (thawed)
Spray Oil (if required)

My alterations-
I used 200g of sweet potato instead of the 400g specified, and I added a small chopped eggplant, a medium sliced ontion, and 4 medium sized mushrooms. Also, the original recipe calls for chargrilled capsicum in oil, but I decided to just used a fresh one instead!

This was DELICIOUS, it was really satisfying when served with a simple side salad. Mum and I had 1/4 each for lunch, and the rest im going to have tomorrow for lunch!
