In this episode, I share a recipe Omelette Muffins. These are perfect to enjoy on a Paleo diet, even Whole 30 compliant! I like to bake them up during weeks I know I will be super busy and unable to prepare my breakfast every morning. I just pop 2-3 of them in the microwave for a minute and I am ready to enjoy! They are also good cold.
1/2 Red Onion
Handful of Mushrooms
1 Stalk Green Onions
2 Garlic Cloves
Handful of Spinach
4 Slices Sugarfree Bacon (Slightly Cooked)
1 Teaspoon Garlic Powder
1/4 Teaspoon Black Pepper
1/4 Teaspoon Kosher Salt
1/4 Teaspoon Dried Basil
1/4 Teaspoon Dried Oregano
1/8 Teaspoon Red Pepper Flakes
10 Large Eggs
Chop veggies. Cook 3-4 minutes on medium heat. Set aside. Whisk eggs, bacon, and seasonings.
Line muffin pan with large parchment baking cups. Pour mixture into each cup. Bake at 350° for 20 minutes.
Let cool. Refrigerate leftovers. Enjoy warm or cold for up to 4 days!
