Sweet & Savory Sweet Potato Pancakes



Who doesn’t love fluffy pancakes!? I don’t think I have ever met someone who has said, “um gross” when it comes to those lucious flap jacks.

Oh wait. I have. Not necessarily about their taste though. When I say “gross” I am referring to how UNHEALTHY they are… Which is why I decided to create some pancakes today… That are 100% gluten & dairy & nut free, but contain a VERY HEALTHY root veggie that I once detested!

These pancakes are the healthiest thing on the planet – ha! Suck it KALE… And they’re perfect to eat prior to a work out, or post work out to replenish your muscles. They’re also an amazing on-the-go breakfast or snack as they’re insanely quick and easy to make and you can throw them in a plastic bag and be on your way!

Sweet Potato Pancakes (Sweet Version)

1/2 Sweet Potato
1 – 2 Tsp Tapioca Flour
1 Tsp Primal Essence Cinnamon Sweet Coconut Oil
1 Egg
5 Drops Sweetleaf Stevia Drops

Sweet Potato Pancakes (Savory version)

1/2 Sweet Potato
1/4 Lbs Ground Grass-Fed Bison
1 Bunch of Spinach
1/2 – 1 Tbs Greek Seasoning
