Tikka Masala Spice Mix
Dry roast and grind the following:-
5-6 Dry Red Chillies
2″ Cinnamon
¼ tsp. Mace
¼ tsp. Nutmeg
3 Black Cardamoms
5-6 Green Cardamoms
1 tsp. Poppy Seeds
Fenugreek Seeds
½ tbsp. Black Peppercorns
1 tbsp. Coriander Seeds
1 tbsp. Cumin Seeds
6-7 Cloves

For Marination:-
250 gms. Boneless Chicken Thighs
Tikka Masala Spice Mix
2 tsp. Ginger-Garlic Paste
Juice of 1 lemon
1 tbsp. Salt
Dried Fenugreek leaves

For Gravy:-
2 tbsp. Ghee
1-2 onion, coarsely ground
2 tbsp. Ginger-Garlic Paste
1 tsp. Turmeric Powder
1 tsp. Cumin Powder
1 tsp. Coriander Powder
1 tsp. Salt
2 tbsp. Tomato Puree
1-2 tsp. Sugar
1 tbsp. Dried Fenugreek leaves
1 tbsp. Garam Masala

– Marinate the chicken with the whole spice mix and the rest of the ingredients mentioned and leave atleast for 1 hour in the refrigerator.
– Spread the chicken pieces on aluminium foil with dollops of ghee.
– Preheat the oven and grill the chicken for 15-20 minutes, flipping midway.
– In a pan add ghee, onion, ginger-garlic paste, turmeric powder, cumin powder, coriander powder, salt , tikka masala spice mix, tomato puree, water, sugar, dried fenugreek leaves and cook until the ghee separates from the paste.
– Take the chicken out of the oven and add it to the gravy.
– Add water and stir.
– Then add the cream, garam masala and stir well.
– Turn the flame of and add fenugreek leaves and coriander.

Serve hot with Naan or Tandoor Roti!
