Char-Grilled Rump Steak Recipe w/ Green Pistou

Juicy rump steaks on the BBQ w/ a delightful green pistou. This video recipe shows each step of the process & helpful tips.

4 Msa Australian Beef Rump Steaks, trimmed and halved horizontally
2 tablespoons Woolworths Select Australian extra virgin olive oil
Freshly ground Woolworths Select sea salt
Freshly ground Woolworths Select black pepper
Green pistou
2 tablespoons Woolworths Select Dijon mustard
2 tablespoons Woolworths Select red wine vinegar
1 tablespoon water
½ cup Woolworths Select Australian extra virgin olive oil
2 fresh garlic cloves, crushed
6 anchovy fillets, finely chopped
2 tablespoons drained baby capers in wine vinegar
1 cup each fresh continental parsley leaves, basil leaves & mint leaves, finely chopped

1. Green pistou: Whisk mustard, vinegar, water and oil together until well combined. Add garlic, anchovies, capers and herbs, season. Cover and refrigerate until ready to serve.
2. Preheat a barbecue plate or char-grill pan on medium-high. Drizzle both sides of the steaks with oil and season well with salt and pepper. Char-grill steaks, in batches, for 2 minutes each side for medium. Transfer to a tray, cover loosely with foil while cooking remaining steaks.
3. Place steaks onto a large serving platter. Serve with Green Pistou.

Tip 1: Green Pistou can be made without adding the herbs up to 12 hours in advance. Stir herbs into sauce, just before serving.
Tip 2: Always rest meat before serving as this relaxes the meat and ensures the juices stay within the meat when carved.
Tip 3: You can use different types of soft fresh herbs when making green pistou.
