Guasacaca and Sous Vide Steak [Recipe] | Flavor Lab

**Guasacaca – Peruvian Style Avocado and Herb Sauce**

**Ingredients:**

* 3 Red Onions
* 3 Shallots
* 1/2 bunch (15 grams) of cilantro
* 1 bunch (30 grams) of parsley
* 4-8 habaneros (depending on desired spice level)
* 6-8 cloves garlic
* 1 avocado
* 1/2 cup (120 mL) white vinegar
* 3/4 cup (180 mL) oil (vegetable, or olive oil)
* 2 teaspoons (8 grams) of salt

**Instructions**

1. Measure out and Roughly Chop solid ingredients
2. Blend ingredients in food processor or blender
3. Add liquid ingredients and salt
4. Blend and your done!
5. Gets better with some time in the fridge.
