One of my favorite Chicken Crockpot Recipe!
You will need :
4-6 lbs of Chicken. ( Boneless will be the easiest! )
1 can of whole Kernel Corn ( Drained )
2 cans of Black Beans ( Drained )
2 jars of your favorite salsa
2 -8 oz boxes of Cream Cheese ( Room Temperature )
1-3 TBSP of Sour Cream
Put 4-6 lbs of chicken into your large crockpot, and put it on high. ( You can use either thawed or frozen chicken. The only difference between the two will be cooking time. ) Add your salsa, corn, and black beans on top of the chicken, and place the lid on for 2-3 hours, if thawed, or 5-6 hours, if frozen.
Once the chicken if fully cooked, or close to, shred your chicken into bite size pieces, and add the cream cheese and sour cream, and allow it to cook for another 30 minutes. Serve wrapped in tortillas or a bed of rice, for a quick meal! 🙂
