This crockpot orange chicken recipe is easy and delicious. I serve this over rice for a delicious lunch or dinner.

I like to use boneless skinless chicken thighs for this recipe. Removing the skin takes out a good part of the fat and keeps it healthier.
6 to 10 boneless skinless chicken thighs (depending on your needs)
3/4 cup lowfat coconut milk
1 1/2 tsp. ginger root, minced
juice from one orange
1/2 tsp soy sauce
2 Tbsp cornstarch
1/3 cup diced onion
2 cloves garlic minced
3/4 cup orange marmalade
In a bowl, combine orange juice, coconut milk, orange marmalade, garlic, ginger and soy sauce.
In another bowl, combine the cornstarch and enough water to dissolve the cornstarch. Then pour into orange mixture and stir.
Place the diced onion in the bottom of the crock pot and then add the chicken on top. Add a little salt and pepper if you like to the chicken.
Pour the liquid mixture over the top of the chicken. Place the lid on top and set the temperature to low for 3 to 4 hours or high for 6 to 8 hours.
Server over white or brown rice and green beans with caramelized onions.
