Crockpot/Slow Cooker Recipe: Chicken Coconut Marcala Stew | Winter Slow Cooker Collaboration

Thank you to Carrie @ WW w/ Carrie for once again putting together this Seasonal Collaboration for our Benefit!

Carrie’s Channel:

Chicken Coconut Marcala Stew: This is a variable Stew, you can add whatever veggies you prefer, and if you do not use potato’s or use less the Smart Points will need to be adjusted.

8 Smart Points per serving is with 1.5 pounds of potato’s added to the recipe. you can find this recipe in your WW app under this name for ease of use.

1 small onion
Chicken Breast, 1 pound
1.5 pounds of potatos
one can of reduced fat Coconut Milk
1 C. of Marcala Wine
1T of flour

Saute Onion in EVOO, Add Chicken to brown, add Flour to creat a rue, add wine to thicken. add Coconut Milk, veggies and stir. Set Slow cooker to 4 hours and simmer.

NOTE: This time I used Tenders, and only required 2 hours of cooking time.

Additionally, I would NEVER use so many potatoes again. it was only
8SP, but it was very heavy. IT is what was on hand, so it’s what I used, but I would go for lighter veggies next time, add one potato for the starch aspect.
