This is a very simple lean pork recipe, made in the slow cooker. This recipe is excellent for Holidays and special occasion. To avoid dryness of the meat, it is important to remove from the slow cooker once is completely cooked inside, when it reached 145ºF or after 2 or 2-1/2 hours.
3 pounds or 1460g boneless pork loin roast, tied together, and seasoned with salt and black ground pepper
2 tablespoons or 30mL vegetable oil
1-14 ounces or 297g can of whole berry cranberry sauce
½ cup or 62g dried cranberries
½ cup fresh orange juice
1 orange zest in strips
1 teaspoon or 5mL ground cinnamon
In a large Dutch oven, sear the entire pork sirloin.
Place all ingredients in the slow cooker pot.
Cook for 2 hours or until the internal temperature reaches 145ºF.
Remove from the Dutch oven, cover with aluminum foil and let it rest for 15 or 20 minutes.
Reduce the sauce by boiling for 5 to 10 minutes. (Optional: you can add 1 teaspoon corn starch to thicken the sauce).
Slice the loin and pour the sauce over it. Reserve some of the sauce for serving.
