Keto Balsamic and Maple Roast | Keto Roast Dinner | Easy Slow Cooker Recipe| Cross Rib Roast

I am LOVING slow cooker recipes (or crockpot recipes), particularly, easy keto slow cooker recipes. It saves me time and makes everything delicious and soft. This particular easy keto slow cooker recipe is a keto roast dinner! To be specific, a keto balsamic and maple roast! The low carb roast is a whole meal and makes a ton of food, so it is great for keto meal prep. We use a cross rib roast for this keto roast dinner and would be perfect for any occasion, chrsitmas, thanksgiving or just any reguslar low carb dinner or keto dinner you’re making.

As I’m on a crockpot kick (or slow cooker), this keto roast is just the best. It is an easy keto slow cooker recipe that anyone can make, regardless of how experienced you are in your keto kitchen. We use a cross rib roast for this easy low carb slow cooker recipe together with some delicious keto vegetables. This easy keto slow cooker recipe would work with most meats as it softens them incredibly. The easy low carb slow cooker recipe can also be adjusted to suit your keto or low carb needs, by choosing the types of vegetables you’d like in your keto roast dinner.

The first steps in this keto balsamic and maple roast is to get that cross rib roast seared. Put that cross rib roast into hot oil and sear all sides. Remove the keto meat from the pan, then put some onions in the same pan with some more oil to infuse the flavours from the pan into the low carb meat. Put the cross rib roast in the slow cooker (or crockpot) on the bed of onions (sounds amazing, right?). Put the slow cooker on high for 4 hours. Then you get to choose whatever keto vegetables or low carb vegetables you want to go with your cross rib roast. This is up to you and you can make it fit your keto lifestyle or goal you’re currently working towards. Add the keto vegetables into the slow cooker and put on high for another 4 hours.

Don’t forget to keep that broth from this easy keto slow cooker recipe. The keto roast dinner juices and all those wonderful vegetables juices create this healthy and hearty broth. You can scoop a few tablespoons full of the broth onto the cross rib roast once it is on the serving plate to not only make this keto roast look amazing, but taste even better.

Ingredients for the Keto Maple and Balsamic Roast
1.5 White Onions
2 Cups Bone Broth (480ml / 16oz)
1/2 cup Balsamic Vinegar (120ml / 4oz)
2 Tablespoons DIjon Mustard (30g/1oz)
1/4 teaspoon Maple Extract (1.25ml/0.04oz)

3.5lb Cross Rib Roast (or any other Roast or meat of your choice) 1.58kg/56oz

1 Medium Turnip cut into blocks
2 Cups of Brusselsprouts halved (300g/10.5oz)
1/2 medium to small Butternut cut into blocks
½ Onion into quarter slices

Macros for entire Keto Roast + Vegetables:
Calories: 4,627 cal
Fat: 172g
Carbs: 60g Net Carbs (83g Total – 23g fibre)
Protein: 632g

Macros per serving of Keto Roast + Vegetables (assuming 8 servings):
Calories: 578 cal
Fat: 22g
Carbs: 7.5g Net Carbs (10.3g Total – 2.8g fibre)
Protein: 79g

Note: Macros aren’t perfect. You’d likely get more than 8 servings out of the meat. But I grouped the meat and veggies in one macro count.
