Chinese Braised Hake (Chinese Fish Recipe)

Welcome to Xiao’s Kitchen – A cooking channel dedicated to creating some of the world’s best Asian dishes

1 Hake Fish (1kg)
1 Tbsp Dark Soy Sauce
2 Tbsp Shaoxing Rice Wine
6 Cloves Garlic
40g Ginger
2 Spring Onions
1 Tbsp Rice Wine Vinegar
Salt to Taste

1. Thinly slice the ginger and garlic
2. Roughly chop the spring onions
3. Make 3 slashes down each side of the fish
4. Heat 4 Tbsp oil in a wok, add the fish into the wok, fry for 3 minutes each side or till light brown
5. Add the rice wine, rice vinegar, soy sauce and salt
6. Add 500ml of water, then add garlic, ginger and half of the spring onion
7. Bring to the boil, cover the wok, reduce heat to medium and cook the fish for 30 minutes
8. Transfer into a dish, sprinkle with the remaining spring onions and serve
