The marination ingredients include:
water, brown sugar, sea salt, mustard seeds, coriander seeds, fennel seeds, black pepper corns, cinnamon sticks, dried chilli and bay leaf.
The pastrami rub consists of:
salt, brown sugar, ground black pepper, coriander seeds and juniper berries.
