Salmon Patties — a Canned Salmon Recipe

Open a can of salmon — your home canned or store bought — and fry up some salmon patties. This is the first in a series of how to use canned salmon in everyday cooking.

SALMON PATTIES
1/3 cup finely chopped onion
1 egg, beaten
10 saltine crackers, crushed [? ½ cup]
1 teaspoon Worcestershire sauce
1/2 teaspoon salt [Don’t add if using store bought canned salmon]
1/8 teaspoon pepper
1 pint can salmon, drained [reserve liquid for sauce] or 14-3/4 ounces canned salmon, drained, bones and skin removed
2 teaspoons butter
