Sichuan Spicy Cod Recipe (Chinese Spicy Seafood Recipe)

500g Fresh Skinless Cod Fillet
1 Tbsp Chilli Flakes
2 Spring Onions
½cm Ginger
4 Cloves Garlic
Small Bunch Coriander
50g Unsalted Roasted Peanuts
1 Tbsp Green Peppercorn
4Tbsp Cornflour
50ml Stock or Water
Salt to Taste

1. Roughly chop the spring onions, ginger, garlic and coriander, cut cod fillets into 1 – 2 inch pieces and place into a large bowl.
2. Sprinkle cornflour onto the fish and toss.
3. Heat 2 Tbsp of oil in the wok and add the green peppercorns and fry for a minute.
4. Add the ginger, chilli, garlic, spring onions and peanuts, fry for half minute on medium heat then remove from heat
5. Heat 1 litre of oil on high heat in a wok (or large saucepan) until smoking hot.
6. Place the fish into the oil 1 piece at the time, deep fry for 1 – 2 minutes, remove from oil and drain.
7. Heat 1 Tbsp of oil in a wok and add the fish.
8. Add the fried spices and coriander in with the fish, sprinkle salt to your taste.
9. Add 50ml of stock or water, cover the pan and cook on medium heat for 5 minutes
10. Transfer onto a dish, garnish and serve.
