DAY 102 – Crispy Tilapia Cutlets

Serves 2-3


3 Fillets of Fresh Tilapia
1 cup (180 g) Bread Crumbs [½ cup (90 g) would actually be enough!]
1 cup (140 g) All Purpose Flour [1/3 cup (50 g) would actually be enough!]
2 Eggs [beaten; 1 egg would actually be enough!]
2 Tbsp (16 g) Granulated Garlic [divided into 1 Tbsp (8 g) & 1 Tbsp (8 g)]
Zest of 1 Small Lemon
2 Tbsp (30 g) Olive Oil
Salt & Pepper (to taste)


1) Season the tilapia with salt and pepper on both sides. Season the flour, eggs, and bread crumbs with salt and pepper. Add 1 Tbsp (8 g) of the granulated garlic into the flour and 1 Tbsp (8 g) into the bread crumbs. Add the lemon zest into the seasoned bread crumbs and mix until everything is combined.

2) Lightly dredge the tilapia in the seasoned flour, shake off the excess, then dip it in the seasoned eggs and finally coat it in the bread crumb mixture shaking the excess as well.

3) Preheat the olive oil in a large nonstick skillet over medium high heat.

4) Add the breaded tilapia into the hot oil and cook for about 3 to 4 minutes on each side. Serve with lemon wedges.
