Tuna Stir fry – An easy to make protein rich recipe with canned tuna and eggs.
One of the favorite recipes in our family.. invented by hubby dear 😉 . A dash of ginger and curry leaves and the scrambled egg makes a whole lot of difference to this awesome dish
All you need for this Tuna Stir Fry is –
about 350 gms of canned Tuna. I have taken 2 tins of canned tuna (165 gms each). Drain out the excess oil or water from the can.
2 onions – slice them thinly
1 tomato – chopped roughly
6-7 green chillies – slit from middle. You can use more or less depending on how spicy you prefer
a small piece of ginger – chop it roughly
Few fresh curry leaves
about 1/2 tsp of red chilli powder. We don’t add much as we have already added a good amount of green chillies
1/4 th tsp turmeric powder
1 tbsp. oil
Salt to taste
Now on to the preparation part ….
Once you heat the oil in a pan, add the sliced onions, green chillies, ginger and curry leaves and fry till the onions turn slight brown. At this point, add turmeric powder and chilli powder and mix well. The add the chopped tomatoes and fry till the tomatoes become soft. Now break the 2 eggs directly into the pan and scamble the egg lightly. Now add the tuna chunks by shredding them with a knife. Now stir fry tuna on medium flame for about 7 minutes or till you feel the tuna has absorbed all the flavours.
This is an excellent combo with pitta bread. You can also use it as a filling for your sandwiches and wraps.
