When you think of the Mediterranean, one of the first things that comes to mind is sweet potatoes. No? Did we get that wrong? Well this recipe might change that from now on. You may just drool, Pavlovian-style, as soon as someone mentions Mediterranean or sweet potatoes. These are deliciously drool-worthy.
Start by washing your sweet potatoes well. You’ll be keeping the skin on, so you want them fresh and clean. Rinse a can of organic garbanzo beans and place them in a bowl. Coriander, cinnamon, paprika, and cumin get sprinkled on those beans with a good drizzle of olive oil. Stir to coat all those beans with goodness. Halve your orangey taters and place them on a cookie sheet. Spoon out the seasoned beans next to your sweet potatoes. You could spice up this dish a little extra here by sprinkling a dash of sea salt and rosemary on the potatoes before they go in the oven. Bake everything for 40 minutes at 400 degrees Fahrenheit.
Pull out the cookie sheet and enjoy the savory scents. Plate your taters. Smoosh down the centers of yon taters with a fork to form a hollow space. Spoon in the beans. Add tahini, halved cherry tomatoes, and parsley. You could also use other types of tomatoes and other herbs, like basil or oregano. Enjoy! Drool away.
